2 cups raw pecans
¼ cup pepitas (pumpkin seeds)
¼ cup sunflower seeds
2 tbsp chia seeds
8 fresh medjool dates, pitted
¼ cup raw cacao powder
¼ cup shredded coconut, plus extra for coating
1 tbsp raw honey
2 tbsp almond butter
¼ cup coconut oil
- Place pecans in food processor and blend until roughly combined.
- Add pepitas, sunflower seeds, chia seeds, dates, cacao powder, shredded coconut, honey and almond butter and pulse to combine.
- With motor running on low, slowly add coconut oil until mixture forms into a dough-like consistency.
- Scoop out 1 tbsp of mixture at a time, roll into balls and flatten with fingers. Coat with coconut and set in fridge for 1 hour. Store in air-tight container in fridge for up to one week.
