No-Bake Cookies

These protein-rich cookies are chock-full of nutrients and fibre. The perfect afternoon snack with your favourite cup of herbal tea, these no-bake cookies are high in fat (the good kind) to keep you feeling satisfied and provide you with an energy boost. Say goodbye to 3:30itis. 

Ingredients

2 cups raw pecans
¼ cup pepitas (pumpkin seeds)
¼ cup sunflower seeds
2 tbsp chia seeds
8 fresh medjool dates, pitted
¼ cup raw cacao powder
¼ cup shredded coconut, plus extra for coating
1 tbsp raw honey
2 tbsp almond butter
¼ cup coconut oil 

Method

  1. Place pecans in food processor and blend until roughly combined.
  2. Add pepitas, sunflower seeds, chia seeds, dates, cacao powder, shredded coconut, honey and almond butter and pulse to combine.
  3. With motor running on low, slowly add coconut oil until mixture forms into a dough-like consistency.
  4. Scoop out 1 tbsp of mixture at a time, roll into balls and flatten with fingers. Coat with coconut and set in fridge for 1 hour. Store in air-tight container in fridge for up to one week.
