Lemon + Coconut Balls

SERVES 10

As well as having citrusy mood boosting power, nuts and in particular cashews, are one of the greatest sources of tryptophan. Cashews are also the highest magnesium-filled nuts, supporting and stabilising the nervous system. 

Ingredients 

½ cup cashews, soaked in water overnight, drained and rinsed
½ cup vanilla protein powder
¾ cup almond meal
¼ cup coconut oil, melted
½ cut shredded coconut, plus extra for rolling
¼ cup raw honey or maple syrup
Zest of ½ lemon, plus extra for rolling (optional)
1-2 tbsp coconut milk
Pinch of Himalayan salt 

Method

  1. Combine all ingredients in a high-speed blender or food processor until well combined.
  2. Roll into small sized balls and roll in coconut and zest.
  3. Place in fridge for one hour to set.
