Coconut + Goji Cacao Bark

Berries are our most powerful source of antioxidants, which we all know fight free radicals. Over-accumulation of harmful free radicals in the body contribute to depressive states, anxiety and insomnia.
Ingredients
½ cup cacao
½ cup coconut oil, melted
2 tbsp pure maple syrup
1 tsp vanilla extract
¼ cup pistachios
¼ cup shredded coconut
¼ cup dried goji berried
¼ cup raspberries
Pinch of Himalayan salt
Method
- Line a baking tray with baking paper.
- Whisk cacao, coconut oil, maple syrup and vanilla in a bowl until well combined. Spread cacao mixture on baking paper and sprinkle with coconut, goji, raspberry, pistachio and salt. Place in fridge for two hours to set.
- Once set, break into rough pieces and store in airtight container in fridge.
