Coconut + Goji Cacao Bark

Berries are our most powerful source of antioxidants, which we all know fight free radicals. Over-accumulation of harmful free radicals in the body contribute to depressive states, anxiety and insomnia.

Ingredients

½ cup cacao
½ cup coconut oil, melted
2 tbsp pure maple syrup
1 tsp vanilla extract
¼ cup pistachios
¼ cup shredded coconut
¼ cup dried goji berried
¼ cup raspberries
Pinch of Himalayan salt 

Method

  1. Line a baking tray with baking paper.
  2. Whisk cacao, coconut oil, maple syrup and vanilla in a bowl until well combined. Spread cacao mixture on baking paper and sprinkle with coconut, goji, raspberry, pistachio and salt. Place in fridge for two hours to set.
  3. Once set, break into rough pieces and store in airtight container in fridge.
