Lemon and citrus scents have a mild sedative, relaxant effect on the body and have long been used in the treatment of anxiety, stress and depression.
1 tbsp sesame oil
1 clove garlic, minced
½ tsp fresh ginger root, minced
1 small red bird’s eye chili, seeds removed and finely chopped
Juice of 1 small lime
1 stalk of lemongrass root, white part only, trimmed
Handful of green beans, trimmed and cut into half
Handful of snow peas, trimmed and cut into half
Handful of bean sprouts
1 tbsp tamari
1 tbsp raw apple cider vinegar
1 sprig of spring onion to garnish
- Heat sesame oil in a frying pan. Add garlic, ginger and chili and cook for two minutes.
- Meanwhile, bring 1.5 litres of water to a boil in a large pot. Add all other ingredients except spring onion. Simmer for 25 minutes. Garnish with spring onion and serve.
