This zingy dressing is wonderfully calm ad uplifting, boosting immunity, enhancing digestion and relieving feelings of stress and unease.
1 large zucchini, spiralised, grated or finely sliced
2 carrots, spiralised, grated or finely sliced
1 red capsicum, thinly sliced
1 cup red cabbage, thinly sliced
½ Spanish onion, thinly sliced
1.5 cups bean sprouts
Handful of coriander, roughly chopped (plus more for serving)
½ cup chopped nuts (I like cashews or peanuts), plus more for serving
1 pack kelp noodles (optional)
Lime wedge to serve
¼ cup coconut milk
¼ cup tamari
¼ cup tahini
1 tbsp sesame oil
1 tbsp raw honey
1 tbsp fresh ginger, finely grated
1 clove garlic, crushed
Juice of 1 lime
½ tsp chilli flakes (optional)
- Rinse kelp noodles and drain well.
- Add to large bowl with the rest of the salad ingredients. Toss to combine.
- Add all ingredients to a jar, screw the lid on tight and shake well until combined. Drizzle dressing over salad and combine well.
- Transfer to individual bowls and top with chopped nuts, coriander and a squeeze of lime.
