Raw Pad Thai

SERVES 2

This zingy dressing is wonderfully calm ad uplifting, boosting immunity, enhancing digestion and relieving feelings of stress and unease.

Ingredients

SALAD

1 large zucchini, spiralised, grated or finely sliced
2 carrots, spiralised, grated or finely sliced
1 red capsicum, thinly sliced
1 cup red cabbage, thinly sliced
½ Spanish onion, thinly sliced
1.5 cups bean sprouts
Handful of coriander, roughly chopped (plus more for serving)
½ cup chopped nuts (I like cashews or peanuts), plus more for serving
1 pack kelp noodles (optional)
Lime wedge to serve 

DRESSING

¼ cup coconut milk
¼ cup tamari
¼ cup tahini
1 tbsp sesame oil
1 tbsp raw honey
1 tbsp fresh ginger, finely grated
1 clove garlic, crushed
Juice of 1 lime
½ tsp chilli flakes (optional) 

Method

SALAD

  1. Rinse kelp noodles and drain well.
  2. Add to large bowl with the rest of the salad ingredients. Toss to combine.

DRESSING

  1. Add all ingredients to a jar, screw the lid on tight and shake well until combined. Drizzle dressing over salad and combine well.
  2. Transfer to individual bowls and top with chopped nuts, coriander and a squeeze of lime.
