Mixed Bean + Lentil Salad
SERVES 2
Ingredients
250g mixed beans (e.g. lima, navy, kidney etc) and lentils, rinsed and drained
2 cups baby spinach
½ Spanish onion, sliced
¼ cup cherry tomatoes, diced
1 small avocado, diced
DRESSING
Juice of half a lemon
Ground pepper
Pinch of Himalayan sea salt
2 tbsp apple cider vinegar
¼ cup olive oil
Method
- Combine salad ingredients in large bowl.
- Combine dressing ingredients in small bowl and whisk quickly to combine. Drizzle dressing over salad and serve.
