Grounding Green Soup
SERVES 2
Green leafy vegetables are an incredible source of B vitamins, aiding in energy production, stress relief and manufacturing of serotonin.
Ingredients
1 bunch silverbeet
1 celery stalk, sliced
½ cup broccoli florets
1 medium onion, chopped
½ tsp fresh ginger, minced
½ tsp cumin powder
½ tsp coriander seeds
½ tsp cardamom
½ tsp chilli flakes
1 tsp extra virgin coconut oil
1.5 litres filtered water
Salt and pepper to taste
Method
- Heat coconut oil in a frying pan. Fry onion for two to three minutes, until. Translucent. Add garlic, ginger and spices and cook for a further two minutes, stirring well.
- Meanwhile, bring water to a boil in a large saucepan. Add chopped silverbeet, celery and broccoli. Add onion mix and simmer for 20 minutes.
- Use stick blender to blend everything to a smooth consistency. Season with salt and pepper.
