Cauliflower Laksa

This one is a retreat favourite. Totally allowed when we’re detoxing, yet so yummy and filling. You will not miss the traditional Laksa version, that’s for sure! 

Ingredients

1 whole cauliflower head, roughly chopped
¼ cabbage, roughly sliced
1 medium brown onion, diced
4 spring onions, diced
2cm thick piece of ginger
1 full garlic bulb, peeled and crush
1 bay leaf
1 tsp cayenne pepper
2 tsp Himalayan salt
2-3 tbsp apple cider vinegar
2-3 tbsp Tamari
3 tbsp brown rice miso
2-3 tbsp black sesame oil
2L boiling water

Method

  1. Heat sesame oil in a large stock pot and lightly fry onion, spring onion, ginger and garlic.
  2. Add all other ingredients and simmer for 20-30min.
  3. Transfer to food processor or high speed blender and blend until smooth and combined.
