The spices in this seasoning aid to alleviate anxiety whilst boosting cognitive function.
6 chicken drumsticks
1 tbsp coconut oil, melted
½ cup almond meal
2 tsp paprika
½ tsp cayenne pepper
1 ½ tsp dried oregano
1 tsp dried thyme
1 tsp Himalayan salt
1 tsp black pepper
- Preheat oven to 180°c and line a baking tray with baking paper.
- Whisk eggs in a large bowl. In another large bowl, combine all coating ingredients.
- Coat individual chicken pieces in egg then in spice mix. Place on baking paper and drizzle with melted coconut oil. Bake for 45 minutes or until golden and crisp.
- Serve with steamed greens or a big leafy salad.
