Turkey is a fantastic source of amino acid tryptophan, a precursor to neurotransmitter serotonin which is responsible for feelings of happiness ad contentment.
1 small cox lettuce, cored, washed and rinsed
250g turkey mince (or meat of your choice)
½ brown onion, finely diced
2 garlic cloves, crushed
2 tsp ground cumin
1 tsp turmeric
½ tsp cayenne pepper
1 tbsp coconut oil
½ cup cherry tomatoes, quartered
½ Spanish onion, diced
1 small cucumber, diced
½ cup fresh coriander leaves, roughly chopped
Juice of half a lime
- Heat oil in fry pan and sauté onion for a few minutes until soft. Add garlic and spices and cook for a further two minutes. Add mince and cook for around 5 minutes, until browned. Break mice up as you cook so as not to be left with big chunks. Set aside to cool slightly.
- Toss all ingredients together in a bowl. Set aside until ready to serve.
- Place lettuce cups upward facing on plates. Fill with meat mix then top with salsa.
