Chicken + Asparagus Salad

SERVES 2 

Sesame seeds (what tahini is made from) are one of the greatest dietary sources of zinc and zinc is a major player in treating depression by modulating the brain (and thereby body’s) response to stressors.

Ingredients

1 chicken breast (approx. 140g), steamed or poached and sliced into strips
1 small bunch of asparagus, hard ends removed and cut into 5cm lengths
½ cup fresh peas
½ cup red capsicum, diced 

DRESSING

1 tbsp extra virgin olive or flaxseed oil
1 tbsp tahini
Juice of half a lemon
Generous pinch of paprika 

Method

  1. Lightly steam asparagus and peas. Drain and combine with chicken and red capsicum in a serving bowl
  2. In a small bowl or glass jar, combine dressing ingredients and whisk well to combine. Drizzle dressing over salad and toss to combine.
