1 cup coconut milk
1 cup fresh pineapple juice (I like to juice my own)
1 ½ cups Ice
A handful of fresh mint
Juice & zest of 1 lime
2 tsp maple syrup
- Blend coconut milk, pineapple juice, ice, mint, lime juice and maple syrup until combined.
- Pour into your favourite cocktail glasses and top with lime zest and a slice of fresh pineapple.
