Tasty Pear + Quinoa Porridge
SERVES 1
Full of protein, magnesium, B vitamins, zinc, iron, phosphorus and omega-3 fatty acids, quinoa (actually a seed not a grain)reduced symptoms of anxiety ad stress by boosting serotonin.
Ingredients
1⁄2 cup uncooked quinoa
1 small pear, roughly chopped
1⁄2 cup almond milk
1⁄2 cup water
1 vanilla pod or 1⁄2 tsp vanilla powder
Method
- Lightly toast quinoa and vanilla in a saucepan over medium heat, stirring frequently for about three minutes.
- Pour in almond milk, water and chopped pear. Bring to a boil then reduce heat and simmer for about 20 minutes. Stir occasionally and add water if needed. Porridge is cooked when it thickens and the grains are tender.
- Leave to stand for one minute then serve as is.
