Tasty Pear + Quinoa Porridge

Full of protein, magnesium, B vitamins, zinc, iron, phosphorus and omega-3 fatty acids, quinoa (actually a seed not a grain)reduced symptoms of anxiety ad stress by boosting serotonin.

Ingredients

1⁄2 cup uncooked quinoa
1 small pear, roughly chopped
1⁄2 cup almond milk
1⁄2 cup water
1 vanilla pod or 1⁄2 tsp vanilla powder

Method

  1. Lightly toast quinoa and vanilla in a saucepan over medium heat, stirring frequently for about three minutes.
  2. Pour in almond milk, water and chopped pear. Bring to a boil then reduce heat and simmer for about 20 minutes. Stir occasionally and add water if needed. Porridge is cooked when it thickens and the grains are tender.
  3. Leave to stand for one minute then serve as is.
