One of my favourite sources of healthy fats, avocado aids in satiety (feeling fuller for longer), thereby playing a role in blood sugar regulation and mood balancing.
1 slice organic sourdough
1 tbsp sunflower or alfalfa sprouts
1 tbsp fresh mint leaves, roughly chopped
2 tbsp feta
1 tsp chia seeds
1 tsp hemp seeds
½ tsp chili flakes (optional)
Lime wedge to serve
Salt and pepper to taste
Drizzle of olive oil
- Toast sourdough to your liking.
- Slice avocado and place on toast. Sprinkle with remaining ingredients.
